Italian Sandwich
A recipe idea for Sandwiches Italian.

products:
1 medium eggplant
4 tomatoes
250g salted herring
15 baguette slices with a thickness of 2.5 cm
70ml olive oil
3 cloves of garlic
4 sprigs of parsley
2 sprigs of basil
salt
black pepper
Method of preparation:
Tomatoes, seeded, when you slice them into small pieces.
Salt them, leave them to drain.
Wash and dry eggplant.
Without them white, cut it into very small pieces, pour them into the pan in which you warmed 30ml oil.
Add salt, sprinkle with pepper and let them sauté about 20 minutes on low heat, stirring them often.
Bake the bread slices, then gently brush one side with olive oil and rub them on the same side with peeled and sliced two cloves of garlic.
5 slices spread with chunks of fish, 5 - with eggplant (mixing with particulate parsley) and the remaining 5 slices of tomatoes.
Arrange the sandwiches on a suitable dish and decorate them with basil leaves.
