Tiramisu "Yana"
products:
1 and 1/2 cups brewed espresso
100 d + 2 teaspoons sugar
4 egg yolks
1/2 cup of wine
450 grams of cheese "mascarpone", warmed to room temperature
1 cup full-fat whipped cream
40 pieces of biscuits
2 tablespoons unsweetened cocoa
Method of preparation:
In brewed espresso dissolve these 2 teaspoons sugar.
Yolks are broken down into the bowl. Add remaining sugar and wine, and then the mixture is broken down again.
The cream is boiled in a water bath with continuous stirring, until thickened. Remove from heat just before it boils.
Cheese "mascarpone" was stirred with a spatula or a fork until soft. Custard was poured on it and the mixture is again broken by a mixer. Add cream and hand-mixed with the cream.
Biscuits were dipped one at a time in coffee, and are arranged close to each other in the tray so as to form a crust. On it is allocated half of the cream. Followed by another layer of biscuits and remaining cream.
Cake is dusted with cocoa powder and cooled for 3-4 hours in a refrigerator.
